The intensity plots can be used to get a better impression of intensity than is possible from viewing the image itself. For example, to clarify whether intensity in adjacent regions of the image is quantitatively different or merely appears that way to the eye.
It can also be used to highlight co-localisation. This technique is used in the following paper, where several figures are direct exports from the OMERO.insight line plot tool:

It's just another way of viewing the data which may highlight certain features, or allow you to clearly view more than 3 channels simultaneously (which is hard if they are all coloured and overlaid).
